Spiced Pumpkin Chocolate Chip Muffins


This morning is a cool crisp morning down here in South Louisiana!  Finally it feels like fall!  This means that I get in the mood for baking lots of yummy things like my Spiced Pumpkin Chocolate Chip Muffins!

These did not last long because they are super yummy!

Spiced Pumpkin Chocolate Chip Muffins

Ingredients:

1 3/4 cup organic unbleached flour
1/2 cup organic cane sugar
2 tsp baking powder
1/2 tsp Pink Himalayan Salt
3/4 cup coconut milk
1/4 cup coconut oil
1/2 of a 15oz can organic pumpkin puree'
1 egg
1/2 cup of chocolate chips
3 drops Young Living Vitality Thieves Essential Oil
1 tsp pure vanilla extract (optional)

Preheat oven to 400F

Combine dry ingredients in a large mixing bowl. Then add milk, oil, egg, pumpkin puree' and vanilla extract. Then mix in 3 drops Vitality Thieves Essential Oil. Last, add chocolate chips and mix well.

I spooned batter into silicon cupcake cups. Bake until cooked through - about 30 minutes.
