Yummy Homemade Peppermint Patties

This recipe is super simple and a fun to make.  My daughters loved helping me make these!

½ cup coconut oil
¼ cup honey
5-7 drops Young Living Vitality Peppermint Essential Oil* (Buy Here)
1 cup semi-sweet chocolate chips

In a small bowl, combine coconut oil, honey, and Vitality peppermint oil, mixing with a spoon. Smash clumps of coconut oil against side of bowl until mixture is smooth. Freeze mixture for a few minutes until it starts to harden, then remove from freezer. Use a small spoon to measure out little balls onto a parchment paper lined plate. Use the back of a spoon to flatten into patties. Place plate in freezer until firm. Using a spoon, dip patties into melted chocolate. Place patties on parchment paper to harden (takes about 10 minutes). On a hot day, you may want to place in the refrigerator.

One little trick I do to help the chocolate set up a bit faster is adding about a teaspoon of coconut oil to the melted chocolate.

This recipe makes about 10 - 12 patties – depending on how big you make them.

*I only recommend Young Living Therapeutic Grade essential oils that are labeled as “supplements” to be used internally. Essential oils are your friends, but they are powerful. Take the time to learn how to use them safely and effectively.
